Peanut Butter Biscuits

Ingredients

  • 1 1/4 cup peanut butter
  • 1/2 cup Copha (or shortening)
  • 1 1/4 cup light brown sugar, packed
  • 3 tablespoons prepared CapriLac® Goat Milk
  • 1 tablespoon vanilla extract
  • 1 egg
  • 1 3/4 cup flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda

Note: The biscuits will firm up a bit when they cool – do not overbake.

Directions

  1. Preheat oven to 190C and line tray with baking paper.
  2. Cream together the peanut butter, Copha (or shortening), brown sugar, CapriLac Goat Milk and vanilla; mixing well. Add the egg and beat in until just blended.
  3. In a separate bowl sift together the flour, salt and baking soda.
  4. Slowly add the cream mixture until just blended.
  5. Roll into balls using a tablespoon of mixture each, slightly flatten with your hand, then press down with a fork (dip fork in flour to prevent sticking).
  6. Bake for 8 minutes then leave to cool on the tray for 2 minutes before placing onto wire rack to cool completely.
  7. Enjoy with a delicious glass of CapriLac goat milk!

Note: The biscuits will firm up a bit when they cool, so be careful not to overbake.
