Delicious Corn Fritters

Ingredients

  • 1 cup self-raising flour
  • 1 tbs chicken stock powder
  • 2 eggs
  • 1/2 cup prepared CapriLac® Goat Milk
  • 420 g corn kernels
  • 1/4 cup chives (chopped)
  • oil (for frying)

Directions

  1. Place flour and chicken stock in a large mixing bowl. Make a well in the centre.
  2. Using a fork, mix in eggs and prepared CapriLac Goat Milk. Add corn and chives, stir well until combined.
  3. Heat oil in a non-stick fry pan and add ¼ cup of fritter mixture into the pan. Cook for 1-2 minutes, each side, until golden and cooked through. Repeat with remaining mixture.
  4. Serve warm fritters with your favourite salad.
