Ingredients
- 4 cups diced potatoes
- A small head of broccoli, chopped
- 2 sticks of celery, chopped
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 1/4 cup vegetable oil
- 1 1/2 cups chopped cooked chicken
- 1 1/2 cups chicken broth
- 2 tsps parsley flakes
- 2 tsps salt
- 1 ½ cups of prepared CapriLac® Goat Milk
Directions
- In large saucepan, cook potatoes, broccoli, celery and onion in hot oil until just softened.
- Add the cooked chicken, chicken broth, parsley, and salt.
- Bring mixture to a boil. Lower heat, cover, and simmer about 20 minutes or until potatoes are tender.
- Stir in CapriLac Goat Milk and season with salt & pepper to taste. Heat soup until steaming but do not boil.
- Garnish with parsley and serve with bread, Enjoy!
