Fluffy Blueberry Pancakes

Ingredients

  • 1½ cups fresh blueberries
  • olive oil for pan
  • 1 cup plain flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • pinch of salt
  • 1 egg
  • 2 tbsp olive oil
  • ¾ cup CapriLac® Goat Milk
  • 1 tsp vanilla extract
  • 1 tsp white vinegar

Optional Ingredients

  • a side of crispy bacon

Directions

  1. Combine dry ingredients in a large mixing bowl.
  2. Add wet ingredients, whisk until just combined. Stir through blueberries.
  3. Add 1 tsp of olive oil in a non-stick pan over medium heat
  4. Pour a heaped ¼ cup of mixture into the pan so it forms a nice round shape
  5. Cook for 1½ minutes until bubbles appear and the underside is golden.
  6. Flip the pancake and cook for a further 1 minute until both sides are golden.
  7. Transfer to a plate. Repeat with remaining batter, using extra olive oil as required.
  8. Serve with maple syrup and top with fresh blueberries. If you would like, add a side of cooked crispy bacon.
  9. Enjoy!
